The main reason why dark hair is preferred in men, is that unlike women, who want to have a "soft" appearance which is more feminine (due to sexual dimorphism), men want to have a "hard" appearance which enhances angles/contrasts, etc. For example, a projecting nose may be undesirable for women -who try to draw attention from it in any way possible-, while for men it is a desirable trait.
