  • Kobideh, direction help

    Ingredients: (4 servings)
    ground lamb or beef, 500 g
    large onions, two (grated)
    garlic, one clove (crushed)
    large egg, one (beaten)
    medium tomatoes, four
    salt
    black pepper
    turmeric, one teaspoon (optional)
    sumac (optional)
    Directions:
    Mix meat, onions, garlic, egg, salt, pepper and turmeric well and leave in the refrigerator overnight (or for several hours).

    Press the meat around long, thick metal skewers and shape evenly. Thread whole tomatoes on another skewer. Barbeque each side for about five minutes, turning frequently. (If skewers are not available or barbequing is not possible, kabab-e koobideh can be shaped into long, thin portions on aluminum foil and grilled at high temperature in the oven. The oven should be pre-heated and kabab-e koobideh should be placed as high as possible near the source of the heat. Again, turn a few times.)

          it didnt help at all !! it was just as like at my guide !! i need more advice and points,

          can someone tell wehtehr its better use red or white onion ?

            doesn't matter aziz, you can use either one. use only 1 onion thought if you are serving for 4 ppl. it would come out good as long as you have the other stuff. Beleive me, I am a chef for making koobideh and i am profesional at it.

            also age migi nemichasbe,make sure you use baken powder(jooshe shirin) that would help to stay in the stick. You can use any black pepper, doesn't matter the kind. Also, you can use any ground meet as long as you have all the other stuff.

              2.man toye resturna ke kobideh mikhoram, aslan malom namishe ke piaz ya garlic tosh hast, ama maan ke drost kardam khili fargh dasht, aslan mazaye asian shish kebab dahst ta kobideh irani, aya bekhatere ine ke garlic ro khob bayad rize rize asiab konam? be jaye garlic mishe az garlic suase fresh estefade kard?

              3.mince lamb baraye kobideh khobe ya inke bayad bazam ono kobid, age kobid chejori ?

                  turmeric, one teaspoon (optional), zardchobe ro haminjori eine namak mirizim rosh ya ba ab mix mikonim ???


                  man didam toye bazi az resturant ha vaghty ke daran kebab mipazan ba brush ye chizi mimalan rosh ke tord ya khsohmaze beshe, kasi mitone bege on chi hast?? va chejori drost mikonan ono ?

                      Baken powder is jooshe shirin. you can get it from super markets. 1 tea spoon is enough for serving 4 ppl. Piazet ro rande bokoni va 1 doone baashe peida nemishe tooye kabab. use Garlic powder, it's much better. You just use Ground meet.

                      na,ba aab mix nakon,mesle namak vo felfel ba baghiyeye chizha mix kon.

                          1. na aziz, there is no bacon in it,mesle Aard mimoone. I think it's spelled Bake'n Powder.
                          2. yes,garlic powder shode like salt
                          3. Don't know how make kabab kenje, vali fekr nakonam toosh mast baashe
                          4. olive oil for what?kababe koobideh doesn't need olive oil

                              abadani jan, man hamon chizai ke gofty ro try kardam,

                              ama yekam seft mishe !! va mohem tar inke, mamolan kobideh narm hast va age lasho baz koni tosh ghermez rang hast age khob napokhte bashe !! ama male man ghermez nist khakestery rang hast dakhelesh!! hatta vaghty ke abesh dar emirize vaghty dare kabab mishe, khakestery rang va strong hast on shafafeyat va ghermezi nadare, !!! hekmat dar chie ??
