Kashk-e Badenjaan
small eggplants, 6
kashk, one glass
tomato paste, one spoon
medium onions, 2
dried mint, 2 spoons (or 200 grams of fresh mint)
cooking oil
salt
black pepper

Peel eggplants and slice length-wise to a thickness of 1 cm. Add salt and pepper and fry on both sides on medium heat until golden. Add half a cup of hot water to one spoon of tomato paste and mix well. Add to eggplants and cook over medium heat for about 4-5 minutes.

Peel onions and slice thinly. Fry in oil until golden. Also fry dried mint in oil for a few minutes. Alternatively, fresh mint can be used. If so, wash and finely chop mint, then fry in oil. Pour kashk evenly over eggplants, follow with onions and mint, then serve.

Heat oil in a non-stick pan until it is hot. Pour in the mix, flatten the surface with the back of a spoon, and place the lid on. Reduce heat and fry for about 10 minutes, until kookoo is cooked under. Cut radially into 4 equal pieces, turn over, and fry for another 10 minutes

Dolmeye Badenjaan
8 small eggplants
400 grams ground lamb or beef
100 grams of long-grain or basmati rice
2 medium onions, finely chopped
cooking oil
2-3 teaspoons of tomato paste
fresh lime juice, 3-4 teaspoons
sugar, 2-3 teaspoons
salt
black pepper
1/2 cup parsley, finely chopped
1/3 cup mint, finely chopped
1/2 cup spring onions, finely chopped
1/3 cup garlic chives, finely chopped
1/3 cup tarragon, finely chopped (optional)

Fry onions in cooking oil over medium heat until golden. Add ground meat and fry further until meat changes color. Add 1/2 cup water, salt, pepper and tomato paste. Mix and cook further until water boils off.

Fry prepared vegetables in cooking oil over medium heat until wilted. Boil two cups of water in a small pot. Add 1 teaspoon of salt and rice and boil further until rice softens. Drain the water and let cool slightly.

Peel eggplants and cut a circle at the tops, then remove insides without creating any holes at the sides or the end. Sprinkle some salt inside the eggplants. Mix prepared meat, vegetables and rice well. Fill the eggplants with the mix and close the tops.

Fry eggplants in cooking oil for 5-10 minutes over medium heat, then place in a pot side by side (avoid stacking them). Dissolve one teaspoon of tomato paste in a glass of hot water and add to eggplants. Add salt, black pepper, lime juice and sugar and simmer for 5-10 minutes until water boils off.

Haven't tried this one yet...if anyone does let me know how it tastes

Ghormeh Sabzi
750 grams boneless stewing lamb or beef
1 large onion, finely chopped

1 teaspoon turmeric
1.5 cups water
1/2 cup dried limes (or fresh lime juice)
3/4 cup black-eye beans or kidney beans
1 large potato, diced (optional)
salt
black pepper
1 cup spring onions, finely chopped
1.5 cups spinach, finely chopped
1/2 cup parsley, finely chopped
1/4 cup coriander, finely chopped (optional)
1/4 cup tareh (garlic chives), finely chopped
1/4 cup shanbelileh (fenugreek), finely chopped (optional)

Trim meat and cut into 2 cm (3/4 inch) cubes. Fry onion over medium heat in half of the oil until golden. Add turmeric and fry for 2 more minutes.

Increase heat, add meat cubes and stir over high heat until meat changes color and begins to turn brown. Reduce heat.

Add water, black-eye or kidney beans, salt and pepper to taste. Cover and simmer gently for 1-1.5 hours hours until meat is tender. Time depends on type of meat used.

Fry potatoes over high heat in the remaining oil until lightly browned. Add to sauce, leaving oil in the pan. Cover and simmer for 10 minutes.

Add prepared vegetables to frying pan and fry over medium heat until wilted. Add to sauce, then add dried limes (or lime juice), cover and simmer for further 10-15 minutes. Adjust seasoning and serve with white rice. An exquisite Iranian dish.

Heat oil in a non-stick pan until it is hot. Pour in the mix, flatten the surface with the back of a spoon, and place the lid on. Reduce heat and fry for about 10 minutes, until kookoo is cooked under. Cut radially into 4 equal pieces, turn over, and fry for another 10 minutes.

Ash-e Reshteh

1/4 cup red kidney beans, soaked
1/4 cup navy beans, soaked
1/4 cup chickpeas, soaked
3 onions, finely sliced
3 Tbsp. oil
2 tsp. salt
1/2 tsp. ground black pepper
1 tsp. turmeric
10 cups water
1/2 cup lentils
1 cup beef broth
1/2 cup chives or scallions, coarsely chopped
1/2 cup dill weed, chopped
1/2 cup parsley, coarsely chopped
2 cups spinach(fresh or frozen), chopped
1 beet, peeled and chopped in 1/2 inch pieces
1/2 lb. flat egg noodles or Persian noodles(Reshteh)
1 Tbsp. flour
1 cup liquid kashke or sour cream, or 1/4 cup wine vinegar

In large pot, brown onions in oil. Add salt, 1/4 tsp. of the pepper, and
turmeric. Pour in water and add kidney beans. navy beans, and chickpeas.
Cover and simmer 45 minutes. Add lentils and broth. Cook 35 minutes.
Add scallions, dill, parsley, spinach, and beet. Stir occasionally and
cook 20 minutes or until done. Correct seasoning(add the rest of the
pepper if needed) and add more water if too thick. Add noodles, flour and
cook until noodles are done--about 10 minutes.

If using kashke or sour cream, set aside a heaping Tbsp. for garnish.
Stir 2 Tbsp. of soup into remaining sour cream. Stir this mixture slowly
into soup. Reheat just before serving, adding more water if it's too thick.

*Mint Garnish
1 onion, finely sliced
3 cloves garlic, crushed
1 Tbsp. oil
1 tsp. dried mint flakes

Brown onion and garlic in oil. Remove from heat. Crush mint flakes in hand and stir into onion

سالاد سبزی


مواد لازم

سیب زمینی اسلامبولی=نیم کیلو
سس مایونز=یک پیمانه
روغن زیتون=2/1 پیمانه
سرکه=2/1 پیمانه
فلفل سبز دلمه ای=3 تا 4 عدد
گوجه فرنگی سفت یک اندازه=4 تا 5 عدد
تخم مرغ پخته شده سفت=4 عدد
نمک و فلفل=بمقدار کافی




طرز تهیه

سیب زمینی را می پزیم پوست می کنیم و بشکل خلال در می آوریمبعد نصف سرکه را در سس مایونز ریخته کمی خردل به آن اضافه می کنیم و هم می زنیم و سیب زمینی را داخل این سس ریخته و مخلوط می نمائیم. فلفل را شسته بشکل خلال خرد می نمائیم و وسط ظرف مناسب گردی می ریزیم. گوجه فرنگی را بشکل حلقه می بریم و دور فلفل می چینیم و مخلوط سیب زمینی با سس را دور گوجه فرنگی قرار می دهیم. بقیه روغن زیتون و سرکه و کمی نمک و فلفل را مخلوط می کنیم و روی فلفل و گوجه فرنگی می دهیم و سه عدد از تخم مرغ های سفت را با قالب یا کارد قاچ قاچ می بریم و روی فلفل بشکل شعاع یا ستاره می چینیم و یک عدد تخم مرغ باقیمانده را وسط آن رانده می کنیم.

خوراك گوشت و سيب زميني



مواد لازم

گوشت چرخ كرده= نيم كيلو
سيب زميني آبپز شده= 1.5 كيلو
تخم مرغ خام= 1 عدد
فلفل دلمه اي ريز شده= 1 عدد
سيررنده شده= 1 حبه
پياز= 2 عددبزرگ
هويج خام رنده شده= 3 عدد
پنير پيتزا رنده شده= 1.5 بسته
نمك و فلفل= به ميزان دلخواه
زردچوبه جهت گوشت= 2 قاشق مرباخوري
ادويه كاري جهت گوشت 1= قاشق مربا خوري
گوجه فرنگي سفت ريز شده 1= عدد جهت تزيين
فلفل دلمه اي ريز شده= 1 عدد جهت تزيين
نمك /زرد چوبه/ادويه كاري مقداري جهت مخلوط نمودن با سيب زميني آبپز شده
روغن مايع به ميزان لازم جهت سرخ كردن گوشت و چرب نمودن ظرف پيركس





طرز تهيه

روغن را داخل ماهيتابه ريخته و پياز را اضافه نموده و سرخ مي نماييم سپس گوشت چرخ كرده را همراه با سير رنده شده/ هويج ردنده شده و فلفل دلمه اي ريز شده تفت داده و سپس نمك و زردچوبه و ادويه و فلفل را نيز اضافه كرده و پس از مخلوط و سرخ كردن كنار مي گذاریم.
در ظرفي سيب زميني آبپز شده را با رنده درشت رنده كرده و سپس 1 عدد تخم مرغ خام و كمي نمك و زردچوبه و ادويه اضافه نموده و خوب مخلوط ميكينم سپس ظرف پيركس را چرپ نموده و مخلوط سيب زميني را داخل آن ریخته و آنرا كاملا درته ظرف پهن كرده تا بصورت يكنواخت ظرف پر شود . سپس با مخلوط گوشت چرخ كرده روي سيب زميني را كاملا بپوشانيد و پنير رنده شده پيتزا را روي آن بريزيد و با فلفل دلمه اي و گوجه فرنگي خرد شده روی آنرا بپوشانيد و يا بدلخواه تزيين نماييدسپس ظرف را بمدت 40 دقيقه درپنجره وسط فربا درجه حرارت 180 درجه سانتيگراد كه حدود 10 دقيقه قبل گرم شده است گذاشته تا پخته شده و ته سيب زميني طلايي گردد سپس ظرف را از فر خارج كرده و بمدت 5 دقيقه كنار گذاشته سپس باهمان ظرف آنرا سرو نماييد. در صورت تمايل مي توانيد مقدار 300 گرم قارچ برش داده شده و تفت داده شده با آبليمو را با مخلوط مواد گوشت چرخ كرده مخلوط نماييد

Fishcakes:

Mavad lazem
1 tin tuna
3 zibzamini
1 tokhmemorgh
1 pinch garlic
felfel, namak, ( + any herb eg, corriander)
1-2 ghashogh ab limo


boil potatoes for 5-10mins
then grate them
pour the tuna, 1 egg, ab limo, salt, pepper and garlic into food blender.
switch food blender 'ON' for a few seconds.
Then mix together with the grated potato using your hands.
take small handfulls and make round, flat fishcakes.
Pour little olli into frying pan, cook fish cakes on both sides for about 10mins (each side)

Eat with noon o mast o sabzi... ya ba polo

et Voila... Bon A'petite

می ریزیم .گوشت را با آرد نخودچی ورز می دهیم و بعد قلقلی کرده داخل قابلمه می گذاریم تا 20 دقیقه بجوشدسپس سیب





زمینی را میریزیم و شعله را کم میکنیم تا خوب بپزد . اضافه کردن کمی رب آلوچه و یا رب انار و یا هرنوع رب ترش


دیگرخوب است. مقداری هویج هم میتوان اضافه کرد( در صورت علاقه)

گردو : 250 گرم چرخ کرده

هویج را رنده کرده می ریزیم و بعد ار جوش آمدن شعله را کم می کنیم و بعد از 2 ساعت گوشت های قلقلی و يا مرغ را

اضافه میکنیم . پس از پختن و جا افتادن خورشت رب انار و یا رب آلوچه را می ریزیم . خورشت آماده خوردن است

(Serves 4)
Ingredients:
lentils, 400 grams
long-grain or basmati rice, 500 grams
ground beef or lamb, 400 grams
dates (pitted), 100 grams
raisins, 120 grams
saffron, 1/2 teaspoon
onions, 2 large
cooking oil
salt
black pepper
Directions:
Soak rice in water for 3-4 hours, then cook in salted water for 10-15 minutes using a non-stick pot until it just softens. Drain water and empty the pot.

Bring 2-3 cups of water to boil. Wash lentil and add to water with a bit of salt. Cook over medium heat for about 15-20 minutes until tender.

Peel and thinly slice onions. Fry in oil until slightly golden. Add ground beef or lamb, salt and black pepper, and fry over medium heat for about 10 minutes. Add one cup of hot water and cook until water has been mostly absorbed.

Wash raisins and dates. Pour 1/2 cup of water and some oil in the non-stick pot. Pour in half of the rice. Follow with meat, lentil, raisins, dates and raisins. Then add in remainder of rice. Cook over low heat for about 20 minutes. Dissolve saffron in 1/3 cup of hot water and pour over the rice. Mix well before serving.

Khoresht Ghormeh Sabzii (Herbs Stew - Herbs & Vegetable Stew)
(Serves 4)
Ingredients:
Fresh spinach (esfenAg) 1 bunch or 1 medium size package.
Fresh dill (sheveed) 1/2 bunch.
Fresh parsely (ja`faree) 1 bunch.
Fresh cilantro or 1 bunch.
coriantro (geshneez)
Fresh Leak (tareh farangee) 1 bunch (use only the green stems).
Fresh chives (tareh) 1 bunch, or substitute stems of one
bunch of scallions (piAzcheh).
Fresh fenugreek
(shanbelileh) 1 bunch, or substitute 1 table spoon
of dried shanbelileh.
1 pound stew meat (beef, lamb, veal, etc.), cubed.
4 dried lemons (limoo amAnee) or,
1 table spoon dried lemon powder (gard-e leemo amAnee).
1 medium onion, finely diced.
1/2 teaspoon turmeric (zard choobeh).
3 tablespoons cooking oil.
1 tablespoon lemon juice (optional).
1 cup of pre-soaked dried beans, or substitute 1 can.
A touch each of salt, pepper and crushed red peppers (if you like it spicy).
Directions:

Wash the meat and let it drain.

Cut off the heads of the leaks and scallions and put the stems along with the rest of vegetables in a kitchen stringer, thoroughly wash and drain them.

Using a cutting board, while repeatedly bunching up all vegetables together, finely chop the vegetables. The smaller the pieces the better. If you have a food processor, you could use it in place of the manual labor :-)

Place the chopped vegetables in a pot, with heat setting on high and frequently stir the vegetables until all their excess water has evaporated.

Add two table spoons of cooking oil and continually stir fry the vegetables until they turn a browinsh color. This process should take about 15 minutes. Take the pot off and put it aside. During the stir fry process, you may add a bit more oil if needed. When finished, the vegetables resemble dried ones with no water remaining in the pot.

In another pot, add about one table spoon of cooking oil and the chopped onions and stir fry until they turn a golden brown color. Add the meat, stir fry for a few minutes, add salt, pepper and turmeric and let the meat fry with the onions for a few minutes. If you are using dried beans, at this point drain them and add them to the mixture. Turn the heat setting to medium.

Next poke a hole in each of the dried lemons and add them to the mixture (or add the powdered kind). Add about two cups (16 oz) of water, place the lid on the pot and let it boil for another 15 minutes.

Add the fried vegetables into the mixture, turn the heat setting to medium-low and let it cook. The cooking time required from this point on is about an hour. Half way through this period, if you are using canned beans, add them into the mixture. Once the meat is separated when poked by a fork, the stew is ready. This stew is served over white rice.

If you like the sour taste, you may add a table spoon of lemon juice towards the end of cooking.

Sabzii Polow (Herbs Rice - Herbs & Dill Polow)
(Serves 3 to 6)
Ingredients:
4 cups (32 Oz) of white long grain rice.
4 table spoons of cooking oil.
1/2 cup (4 Oz) chopped Chives/Scallion stems (tarreh/piAzcheh).
1-1/2 cups (12 Oz) Parsely (jafaree).
1 cup (8 Oz) coriander (gheshneez).
1-1/2 cups (12 Oz) fresh Dill Weed (sheveed).
A few large, outer leaves of lettuce.
4 Oz of water.
Directions:
For best results, soak the rice for a few hours in hot water and salt before cooking.

Wash and drain the vegetables. Using a cutting board and while repeatedly bunching up the vegetables, finely chop them.

In a medium size pot, half-way filled with water, bring the water to a boil. Add the rice (and the water it was soaking in), and let it cook for a few minutes until it starts boiling. Stir the rice a few times during the boiling process. Occasionally chew on a few of rice grains to see if they have softened.

Near the end of boiling, add the fresh chopped vegetables (if you are using dried vegetables do not add them in yet because they will get washed out). Stir the rice one last time and then take it out and drain it in a kitchen stringer. Run the tab water on it to wash out some of the excess salt.

Pour the oil in the pot, add 4 Oz of water, lay the lettuce leaves in the bottom of the pot and add a bit of extra oil if necessary. If you are using dried vegetables in place of fresh ones, you will have to mix them in as you are adding thin layers of rice in the pot, in the shape of a heap.

With the back of a spoon, make five holes, one in the center and four around it so that the rice can breath in the cooking process.

Spread a little water on top and close the lid. Let it cook for a few minutes on high heat. When steam starts to rise, change the setting to medium heat and let it cook for another 15-20 minutes. Then turn the heat to medium-low, sprinkle some cooking oil to prevent drying, and let it cook for about another 10-15 minutes before serving.

HINTS:
If you have a choice, use any of the Basmati brands of rice (AftAb, Pari, Gilda, Feel-Neshan, etc.) you can buy from middle eastern or Indian stores. But be careful not to overboil these types. They get pretty sticky if you over cook them. If all else fails, use Mahatma brand (American from supermarket). They take longer to soften, and there is less chance of coming out sticky.
When putting lettuce leaves in the bottom of the pot for purpose of forming bottom crust (tah deeg), it is best to use a teflon coated or any other non stick pot for this purpose. In most cases, after cooking the rice in such pots, you can put a large round plate over the pot, flip it over and get the rice and the crust to come out in one piece

Khoresht Ghormeh Sabzii (Herbs Stew - Herbs & Vegetable Stew)
(Serves 4)
Ingredients:
Fresh spinach (esfenAg) 1 bunch or 1 medium size package.
Fresh dill (sheveed) 1/2 bunch.
Fresh parsely (ja`faree) 1 bunch.
Fresh cilantro or 1 bunch.
coriantro (geshneez)
Fresh Leak (tareh farangee) 1 bunch (use only the green stems).
Fresh chives (tareh) 1 bunch, or substitute stems of one
bunch of scallions (piAzcheh).
Fresh fenugreek
(shanbelileh) 1 bunch, or substitute 1 table spoon
of dried shanbelileh.
1 pound stew meat (beef, lamb, veal, etc.), cubed.
4 dried lemons (limoo amAnee) or,
1 table spoon dried lemon powder (gard-e leemo amAnee).
1 medium onion, finely diced.
1/2 teaspoon turmeric (zard choobeh).
3 tablespoons cooking oil.
1 tablespoon lemon juice (optional).
1 cup of pre-soaked dried beans, or substitute 1 can.
A touch each of salt, pepper and crushed red peppers (if you like it spicy).
Directions:

Wash the meat and let it drain.

Cut off the heads of the leaks and scallions and put the stems along with the rest of vegetables in a kitchen stringer, thoroughly wash and drain them.

Using a cutting board, while repeatedly bunching up all vegetables together, finely chop the vegetables. The smaller the pieces the better. If you have a food processor, you could use it in place of the manual labor :-)

Place the chopped vegetables in a pot, with heat setting on high and frequently stir the vegetables until all their excess water has evaporated.

Add two table spoons of cooking oil and continually stir fry the vegetables until they turn a browinsh color. This process should take about 15 minutes. Take the pot off and put it aside. During the stir fry process, you may add a bit more oil if needed. When finished, the vegetables resemble dried ones with no water remaining in the pot.

In another pot, add about one table spoon of cooking oil and the chopped onions and stir fry until they turn a golden brown color. Add the meat, stir fry for a few minutes, add salt, pepper and turmeric and let the meat fry with the onions for a few minutes. If you are using dried beans, at this point drain them and add them to the mixture. Turn the heat setting to medium.

Next poke a hole in each of the dried lemons and add them to the mixture (or add the powdered kind). Add about two cups (16 oz) of water, place the lid on the pot and let it boil for another 15 minutes.

Add the fried vegetables into the mixture, turn the heat setting to medium-low and let it cook. The cooking time required from this point on is about an hour. Half way through this period, if you are using canned beans, add them into the mixture. Once the meat is separated when poked by a fork, the stew is ready. This stew is served over white rice.

If you like the sour taste, you may add a table spoon of lemon juice towards the end of cooking.

ماکارونی قالبی
مواد لازم برای 6 نفر:
ماکارونی=1 بسته
گوشت چرخ شده=750 گرم
تخم مرغ=4 تا 5 عدد
جعفری خرد شده=2 تا 3 قاشق سوپخوری
کره یا روغن آبکرده=2 تا 3 قاشق سوپخوری
سس گوجه فرنگی=1 پیمانه
پیاز سرخ کرده=3 تا 4 قاشق سوپخوری
رب گوجه فرنگی=دو قاشق سوپخوری

طرز تهیه:
ماکارونی را طبخ و آماده می کنیم،بعد گوشت را با پیاز کمی سرخ می کنیم،رب گوجه فرنگی را در یک لیوان آب حل می کنیم و داخل گوشت می ریزیم و کمی نمک و فلفل می زنیم و می گذاریم آبگوشت کمی تبخیر شود.تخم مرغ را در ظرفی می شکنیم و با کمی نمک و فلفل بهم می زنیم. ماکارونی آماده شده را با تخم مرغ مخلوط می کنیم،ته ظرف نسوزی را که بهتر است وسط آن سوراخ باشد دو سه قاشق روغن یا کره آبکرده می ریزیم و یک سوم از ماکارونی را در این ظرف می ریزیم و نصف از گوشت و کمی جعفری را روی آن می ریزیم و باز نصف از بقیه ماکارونی روی گوشت می ریزیم و بقیه گوشت را روی آن می ریزیم و روی گوشت را با بقیه ماکارونی می پوشانیم و در ظرف را می گذاریم و ظرف را می گذاریم کف فر با حرارت 350 درجه نیمساعت تا سه ربع بماند،بعد ظرف را بیرون می آوریم و ماکارونی را در ظرف برمی گردانیم و کمی از سس گوجه فرنگی روی ماکارونی می دهیم و اطراف ماکارونی را با جعفری تزئین می کنیم،جعفری خرد شده را با بقیه سس مخلوط می کنیم و در سس خوری می [CENTER]
