  • Want to expand my repertoire of recipes beyond kabob/ghormeh sabzi

    I'm wondering what other iranian foods exist beyond the ghormeh sabzis, kabobs, loobia polos. I love the classics but have a feeling there is way more to our cuisine than the traditionals I grew up eating in the US. For example, once at a friends house I tried "ghelieh mahi" - delicious!!! They said it was a shomali food and so I'm wondering if anyone has any recommendations or would like to share some unique regional recipes or other classic recipes that us first generations may not know about.

    there is something to the effect of a dumpling called 'gondi' which is cooked in jewish circles in iran and is made of onions, ground lamb or chicken, ground chickpeas, olive oil, salt and cardamon. it looks very plain, but its not to be confused with matzah balls which have different ingredients. they are either served in a clear chicken broth or put into naan with some sabzi. a relative of mine cooks these once in a while, i'll ask around for some more untraditional persian recipes.
